  • Pickling beetroot.

    I never thought I liked pickled beetroot although I love roasted beetroot. However my husband bought some B**ters baby beetroot in a sweet malt vinegar and I quite like them. They haven't got that vinegary bite most have. Has anyone got a recomended recipe that is similar. Sweet, without the "bite" that doesn't have to be fridged until it is opened.

    You can use your usual recipe of pickling spices and vinegar and then just add sugar to the mixture until it is sweet enough for your needs.

    Use the sterilised/warm jars/prepared beetroot.

    I don't really follow a recipe anymore - but basically.
    Add Vinegar to the pan, then add the spices/herbs you like - I use peppercorn seeds, mustard seeds, dried chillies, bay leaf - you can add cinnamon, cloves etc.
    Bring to the boil, add sugar to taste and pour over beetroot.

      I just use brown malt vinegar (no spices) and add sugar. Do some small batches and experiment with the amount of sugar until you achieve the taste you are looking for.

        I find cidre vinegar less potent for most pickles

            I've never done it but I don't see why not.

            I've made lots of chutneys and Piccalilli in the past without a problem but this year I made pickled limes which went mouldy very quickly. This is why I worried about doing beetroot.
