What do you grow on your other plot?
You could add in a few trees, maybe hazelnut bush... different fruits - maybe tayberies, loganberries etc. permanent asparagus bed?

One for permanent stuff like fruit bushes and trees, rhubarb, asparagus and the other for annuals that need more attention.

Just what I was going to suggest....permanent fruit and nuts and lots of flowers ( to encourage bees/insects) flowering at different times of the year.
Maybe a pond and insect houses ...the sort of place wildlife would choose to overwinter?

Try and make it low maintenance too

Good for you taking it on. Espesh if no-one else wants it!
On our first site we accidentally ended up with 3full sized allotments!!

It all depends, but what everyone else have said is perfect. Maybe see if you can have bees? I'd go for asparagus in droves, because I love that.... and a huge amount of beans lol
Chickens maybe?
I quite fancy the idea of having chickens on mine, but it's a lot of work to do it properly, and avoid rats.

How exciting! I can imagine me and my friend might expand to two allotments after the first year too lol

They are HUUUUUGGGGGGGE, lol

Just worked it out the wider plot is about 420 square metres or 4,500 square feet, WOW

In total I have about 700 square metres or 7500 square feet between 2 plots, OMG I have a lot of work to do lol

I had a 1/2 plot this year and have taken on another 1/2 plot for this next year, so not quite as grand a scale as your vast estate

My plan is to grow more of what was successful for me this last year and try and stop the critters from eating the stuff that failed. in the process see if i can make a dent in the gazillion seeds I seem to have accumulated.

I think bees are allowed but not pigs

You should take a moment and think about what you want to grow.
Then assess what you've got - are there already trees and fruitbushes on one of the plots?
Which one is the sunniest?
Do you want a greenhouse or polytunnel?
Is there water at each?
Are they far apart?
Which is most convenient for deliveries - of manure, wood chip, parking, bonfires?

So many options but only you can decide how big a plot you can keep under control. Its easy to get carried away and when it stops being fun, its time to stop.

When I took on my second plot. I just did one big field of potato’s. Yes it was hard work. But it cleared the ground until I could decide what I wanted to do with it. Like the others have said. It ended up with trees and fruit bushes which was easy to look after
