Just seen a 2 inch stag beetle in the garden. Only seems interested in an dead tree root. Should I be worried for my veggies?

They seem to be only interested in dead wood, so your veggies are safe. More than that, you are very fortunate and should do whatever you can to protect your stagbeetle!
