  • Will beetroot be OK

I had some beetroot. The frosts have wilted the tops.
Will the roots still be OK or will the frost have ruined them?
    Thanks

I lift and cook beetroot most of the winter.

As long as the neck isn't started to get wide - it usually isn't too woody...so it cooks well.

I lifted a few last week before the hard frosts and just left them outside. I cooked a couple today to slice up in sarnies tomorrow and they seem perfectly fine.

Beetroot like most root veg can withstand the frost and should be fine.As Zazen says, being woody at this time of the year is more likely to be a problem.

Got round to digging up a few last week. The tops were just a mushy mess.
But the beetroot were perfect, Yummy !
