Default When to harvest herbs?

I want to get some in to dry sometime before winter but I was wondering when the best time was. Most of them are in flower at the moment, which is very pretty but I'm wondering whether I should still harvest them then!

Any tips would be great

Hi Rachel

For best results they should be harvested before they flower although with most the flowers are also edible. Thyme and sage should still be ok but oregano/marjoram not so good. If you have lemon balm try cutting it back and then dry any second growth. You won't get much from this one but boy what a scent. I often find I have to cut lemon balm and mint back as the caterpillars get to them before I do.

Ok thanks! When the oregano and majoram have finished flowering should I be alright to get them then?

Will try to remember next year as well and get them harvested before they flower.
