  • What to do with my chillis?

Just harvested a load of apache chillis and strung them up in an upstairs sunny window to dry out, but I don't know what to do with them.

Can I grind them up, store them then sprinkle wherever and whenever I like. Was also wondering whether they would make a good chilli powder.

Yes they should do, although they need to be completely dried out first
Have you thought about stringing them?

How do i speed up the ripening process, if that is all at possible? They are beautifully long, chunky, cayennes thinking they are jalepenos.

I've done that - I had a load of chillis in a bowl on a sunny windowsill and eventually they were so dry I bunged them all in my coffee grinder and made a pot of chilli powder! This was two years ago and I only ran out earlier this year. Last years chillis went a bit funny (think they were a bit damp) and started to mould so I salvaged what I could and made chutney! Hopefully I'll have enough for both!

          mmmmmmm love chillis!

PS if you do use a coffee grinder or somesuch gadget - make sure you clean it thoroughly after LOL
