  • Tough cabbage

    I grew a large patch of cabbage, because I love it. Sadly, the variety I have grown (can't remember which one just now) has proved to be really tough.

    What to do ten well-produced but tough cabbage plants?

    Suzie I've used a tough cabbage to bake a Galette this one is a nice recipe :-

    3 Fried Cabbage Galette Auvergne Region Smoked Bacon Garlic Sea Salt Olive Oil Steam The Cabbage

      Shred and freeze. The freezing will break them down a bit.

          Would watering them for a few days before cutting them make them a tad softer????

          .... my courgette / marrows have hardly any flesh inside- so I'm planning on watering them more in the run up to my 'Great British Squash Off' cooking session ( ie a whole week of chopping and cooking and preserving!)

          I'm hoping this will make a slight difference- (and LOVE RL's idea of freezing them!)

              Put them on to boil earlier? Just kidding - getting up to make tea on a Sunday morning we could already smell the cabbage boiling for lunch next door.

              How about cooking it slowly with goose or pork fat, if you do such stuff, or just butter? Or cream and juniper.

                  Make some Ribolitta but pop the cabbage in quite early so it has a chance to break down. I used some quite tough cavolo nero leaves in it a couple of weeks ago and it was delish!

                      I hot fried an onion until it was brown and then threw in cabbage and then a stock cube and some water and cooked until it was just done. Oh it was heavenly.
