Default Toms Help

I have been growing veg for the last 10 years or so but I have recently moved to Ireland and have at last got space for a 16 x 30 poly tunnel. It is fab and I have grown many many veg from the seeds including loads of toms. I am growing everything organically and would like to know what is the best soil/compost as I have too many for grow bags and it will be too expensive. The soil I have is organic and has a ph of about 6.5-7. I have some seedweed extract which I have been told is great to spray on the leaves of the toms but Im not sure how much and how often. Also I have some chicken manure pellets and would like to know whether this should be added to the soil for not only the toms but also other veg such as peppers and cues. Would this manure also be good outside for my root veg. Any help would be really appreciated. Thanks a million.
