    hindsight is a wonderful thing but foresight is a whole lot better

    Lots depends on how you want to use it. You can dry it, or you can freeze it.

        I also have a bumper crop which I put down to the very dry weather. Mine is growing in a large container and rarely gets watered but it's become quite a bush this year. I'll just pick a few branches and hang them up to dry then bring the pot into the greenhouse over winter.

          I freeze a lot of my herbs, then when the time comes I just crumble them into whatever I'm making (works great with Basil, for sauce). Sage, i'd probably dry out then store in jar..

            I leave it on the plant. It happily stays there for all year harvesting.
