  • Storing (preserving?) garlic

    I know that storing garlic in a cool, dry place is the usual method of storing garlic, however my shed is not exactly dry!! As buying another shed is not an option how else could I store my garlic for use over the winter months?? Would it be possible to peel each clove and store them in a kilner jar full of olive oil??

    You can freeze it in oil, puree in a blender and use 2parts oil to 1part garlic.
    I just chop mine up and freeze as is or you can store it in vinegar. There will probably be more ideas in the preserving threads.

      You can pickle in vinegar or brine. Oil alone can put you at risk of botulism, as Scarlet says.

        I strung mine last year and hung it by the cooker. This year it's in a turtle bag in a drawer in the kitchen....

          We use a lot of passata during the year. If you also have the tomatoes (or use tinned ones) you could make your own.
