  • So that's why my courgettes weren't developing!

How did this one get away?! And what the hell do I do with it?

I tried jogging, but I couldn't keep the ice in my glass.

It's amazing how they can hide Cupcake.

It will be good for soup though. Courgette and ginger is rather nice.

From each according to his ability, to each according to his needs.

Yeah, that might have something to do with it!! Personally I'd halve it lengthways. Scoop out the middle (don't throw it away), leaving about an inch of flesh still inside the skin. Score the flesh and drizzle over some olive oil, season and put it in the oven (approx 200 degs C), for about 20 mins. Meanwhile, chop up the scooped out flesh and put it in a frying pan with some minced beef, chopped onion, sage and Worcestershire Sauce. When that is cooked through and the 20 mins is up, Take the skins out of the oven and stuff the halves with the beef mixture. Then I give it another 10 mins in the oven. Yum!!

I would treat it like a marrow and stuff it!

I made some of mine into the Marrow and Ginger conserve in the GYO preserves booklet that came in the Sept issue, except we didn't have any ginger , so I added 100g dried apricots instead . Son No2 loves it, but a bit on the sweet side for me.

This is why I cut back courgette foliage. I miss things like this, otherwise!

You could make soup out of it, it contains enough water of it's own that you won't need to add any.
