Long story short, i bought waaaay too many to use. Will these keep until later on in the season, or even until next year? or will they be goners?

I never keep seed potatoes, they just keep sprouting then use up all their energy. Same with onion set I've found! I had some Id forgotten about at the back of my shed and when i took them out they were completely hollow and just papery....

you could pickle the onions, or plant them very close and pull them and use as spring onions

Onions could even be done in pots for spring onions.
For the potato sets you could experiment with storing some earlies in the fridge for planting in June/July for some xmas spuds. Some say it works....Comment

I store my own potatoes in the salad drawer of the fridge for up to 8 months, for replanting. If you plant them in containers in early August they should miss any blight spores (I did it last year for Xmas spuds: they were tiny though, it's just for the novelty)
The foliage will die back over autumn and you can then leave the container in a frost free place to dig up your tiny spuds on Xmas morning
