Last Autumn we had more potatoes than we could store so I covered what was left in the ground with a thick layer of home made compost and covered that with cardboard. I have dug some up today. They haven't been passed as fit for human consumption as yet by the Home Food Standards Agency (wife) but they look fine to me.

What you've created is a basic form of root clamp.

It's a traditional method of storing root veg. Most people will now bring them into a cool dark place over winter like the garage or frost free shed. The benefit of bringing them inside is that it's easy to tell if you have a bad spud which can then be isolated so as not to rot the others.

I remember the straw covered clamps from when I were no'but a lad and I remember going gleaning after the harvest. The store in the house was full so this was an emergency measure.Comment
