They are fine to eat with bits of pink on them. I think there are a few varieties with pink touches, the best known being King Edwards - brilliant for roasties. they are possibly what you had bought from the supermarket.

Give them a wash, par-boil then roast in goose fat (or olive oil if you prefer) they are scrummy!!!

Pink is fine, green is deffo not. Lots of varieties are pink/red and they're lovely. Do try and remember what variety they are when you plant them (Listen to her who's lost all the labels)

Well we had them for tea tonight, just boiled with a drop of butter, salt and fresh parsley from the garden... gorgeous....
I wanted to roast them in Olive oil with a bit of rosemary but the OH won yet again...
