  • Pickling your own onions

    Hi

I have a bit of a strange question but here goes...I dug up what appears to be several million paris silverskin pickled onions last weekend. They were bulging at the seems to come out of the ground.

I have made pickled onions before with 'proper' onions not silverskins...

My question is this. Do I need to let them dry a bit first before pickling. I have already topped and tailed them but I havent actually washed them off. They are currently sat in a bowl in my kitchen waiting for the next step. Is it just a case of washing them and salting them or are they best drying out for a little bit first?

    Thanks!!

Well, as you've already topped and tailed them you'd better get on with the pickling. You use a salt solution to draw excess moisture out of the onions before adding the vinegar, but I'm sure you already know this from pickling before.

I pickled ours before they'd started to dry out because they're easier to peel.

I did a huge jar, expecting them to be left to one side until later in the year, but they've been eaten. Best ever, apparently!

That's one of the reasons I find growing your own is so satisfying Endymion. It's so good to see the food being really enjoyed.
