Can't believe I left my parsnips in the ground. They have now started sprouting. Shall I just chuck them on the compost or will they do anything.

Dug up my last few on Saturday. Were still lovely roasted, even though they had started regrowing. Wish I had a few more left - supermarket ones are never quite the same!Comment

My dad always made parsnip wine at this time of year-it was one of his better brews and after a few years was like a nicer type of Sauternes. Much better than his pea pod, although that wasn't that bad in comparison to the nettle beer I once made as an experiment

I thought I'd pulled all mine for the freezer a couple of weeks ago, but I noticed a few little self-seeded plants yesterday. Will wait to see how they develop. Parsnips sprouting again!
I still have loads of parsnips in the ground, and noticed today that they are sprouting new foliage.
Should I dig them up or can I leave them in for a bit longer? If they are best out of the ground, do they freeze well (presume they need blanching?)

We had just the same question a few weeks ago - dig them up and use/freeze them or leave a few to set seed?

Before you get too excited you may find they have got very gnarled and woody - inedible in fact!
In which case, if they are not F1, keep them for seed saving!Whooops - now what are the dogs getting up to?Comment
