jaspee de vendee squash

Some kindly grape sent me some jaspee de vendee squash seeds which are doing really well. My question is, how do I know when they are ripe? I have about 5 squashes on each plant and some of them have turned a lovely burnt orange colour. I don't want them to go over and I know butternuts take a long time to ripen...
