  • Eating the Brussel sprout leaves???

Wondering if you can eat the brussel sprout leaves and if they are as nutritious as spring greens?

    thanks

You can eat any of the cabbage/sprout/brassica leaves.
With sprouts, you can eat the sprout tops once the sprouts have finished so no reason why you can't eat the leaves too. Just do[t eat them all as the plant needs some to grow!
I'm not a nutritionist so can't answer your other question. Just eat and enjoy

I always eat my sprout tops once I've harvests the sprouts, and I'm with VC in saying before that I'm sure the plant needs all the leaves it got.

Last year I cut the tops off early to see if this encouraged the sprouts to swell.

They were large tight balls of leaves so I just said that they were the sprouts.

Sprout tops are absolutely f'in gorgeous, but if you eat the lower leaves you will affect the sprouts!
