    Seasonality: I gather we're in-between seasons right now. Is it right that the new varieties come in towards the end of this month. What are the qualities of spring cauliflowers and is this a good time to develop and write about cauliflower recipes?

    Whilst I love the florets, the stalks and leaves are such great resources for cooks. Any thoughts on the best varieties for juicy leaves and stalks?

    Any favourite varieties or cooking methods - I'd love to hear about them ...
