  • Can I eat beetroot after it has bolted?

My first year at growing beetroot, we had a few earlier in the season, which were nice, but my second sowing have all bolted, would they still be ok to eat or are they destined for the heap?

They usually go a bit woody but sometimes they're alright for pickling.

Did they make any bulbs, or have they just produced flowers?

They have nice big, tennis ball sized roots, they have buds on the flower stems, but no flowers yet

Pull them and try them!! Some may be a bit tough but they'll only get worse if you leave them to flower. They won't poison you but may blunt your teeth if they're too old

Lift them before they get any further. Cook them and see what they're like.

I would think that like anything else thats bolted they will have a fibrous central core. If they are large and you can be bothered, there will should be quite a bit of edible meat around this central core?
