The reddish tinge resembles a winter cabbage like January King or suchlike.

I agree with jacob and think they will eventually be ball headed!

Last year with my savoys I picked off outside leaves and ate them leaving the middle to heart up. There are only two of us so I never took much at once and it didn't seem to hurt, so maybe make a use of some of those lovely outside leaves while you wait a bit longer for the rest to bulk up?

                Hi,

They look like january king I got mine from Marshalls as plugs they looked the same as yours.

In your first picture you can see two leaves starting to come together in the middle that normally is the start of a head as I can tell from some of my other cabbages.

Note of caution, my january kings never hearted up they just bolted straight to seed which was irritating, my other plugs planted the same time hearted well enough.

I would harvest one or two for greens they taste nice, but leave them much longer and they'll bolt i suspect.
