  • Digging up and storing Jerusalem artichokes

    Hi,
I am thinking of lifting my Jerusalem artichokes over the next couple of days. They are on my old allotment site so I want as much stuff off there over winter as possible. Don't want anything else walking.
So if I get them lifted now what's the best way of storing them for cooking with and to keep until next year at the new plot?
    Thanks

NVG they should keep for a couple of months in the fridge plus you could plant some now in pots ready to go in your new plot next year.

They keep quite well in moist compost and can even be dug back up in frost.

They can dry out if just left out, but I forgot a plastic bag full in the back of the car a few years back, found 'em in late February (no, I don't clear my car out very often), starting to sprout. I planted a few, and they grew fine...
