    I seem to have grown far to many chillies so I found a wonderful way of using them

    I could never give my chillies away in one big hit!! That would really put me of growing, we don't use alot of chillies in my house but I love cooking with them and i love giving jars of chilli oil, vinegar and chutneys away for presents. The rest are frozen or dried and used throughout the year.

      I've frozen all of mine that have ripened so far. Got loads of scotch bonnets and krakatoas in the freezer. I give away the odd handful to family but I wanna make some bits and bobs too

        How do I freeze my chillies? I'm new to growing it's my first crop and would really appreciate any help you can offer me ...thanks

                Ha I've gone down that route but sometimes I only want to use half of a habanero! So I now chop them up ready!! I did bung in a few very large courgettes last year though...

                  I'm definitely going to try freezing some next year!

                  I tend to make lazy chilli but this year, thanks to this place, I discovered Nigella's chilli jam so I now have jars and jars of that and I'm still hoping for enough for a final batch!

                    I love the nigella recipe but apple and chilli jam is also a good option - just uses 5 cayennes, or 1 hab and half a pepper.

                    Recipe,

                    1 pint of apple juice ( I use crab apples for a lovely colour)
                    1lb Sugar ( not preserving)
                    Tablespoon of red wine vinegar
                    5 cayennes/ or 1 Hab
                    Half a small pepper if you want more bits in it!

                    Bring juice, vinegar and sugar slowly to boiling point.
                    Add chillies and a little butter to avoid scum forming.
                    Boil rapidly to setting point. Mine takes exactly 5 mins.
                    Makes 3 165g jars exactly. (Small 24p mint jars from @sd@!)

                        Ive just made another lot - ( 24 jars all together today - Xmas pressies!!) my brother loves xtra hot food so I used 2 habaneros to 1 pint of juice- way too hot for me but he's just taken one home... I won't have any left for Christmas!
