  • Dehydrated Runner Beans

I have frozen as many Runner Beans as space will allow and so my thought turned to how else I could preserve them for winter use.

I was thinking about slicing them finely and dehydrating them for use over winter in soups and stews. Has anyone tried this and was it successful?

My mum used to salt them in big pots. I suppose in a way that would slowly dehydrate them as the salt would draw out the moisture. They have to be rinsed well before use (obviously )

I've just posted on another thread about my good experiences with salting runner beans last year. They're not quite as good as fresh but still very welcome in January

Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

Which one are you and is it how you want to be?
