Eat it and enjoy it. Pickles and chutneys can last in good condition for years.

Well, I'm still eating mine and I'm still here. I haven't, as yet, had any beetroot big enough from the garden but I'm still dead chuffed when I make my own lettuce, onions and radishes from the garden and then add my own pickled beet AND cucumber.

Pickles and chutneys last for years, eat and enjoy. Just for interest, what made you think it might do you harm? No mould on it I assume?

Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

Which one are you and is it how you want to be?

It wouldn't stay in the fridge that long in our house, lucky if it would last a week...yum..

What sort of vinegar do you use for this, ordinary malt vinegar? And do you need to cook the beets first?
Save Red Admiral, Small Tortoiseshell, Peacock. Coma and Painted Lady butterflies. Dont cut stinging nettles in summer.
Only cut nettles grown in the shade.

You can buy pickling vinegar,or make your own,and yes cook them but do not peel them until after they are cooked or the colour will bleed out of them

Finished the last of my last jar lunchtime but discovered two reasonable sized fresh ones in the salad bed so treated myself to those at dinner. Lovely!
