please help ive loads of rhubarb and was wondering can i freeze it can some one please help me

I just chop it into chunks, put it in freezer bags in lb portions, and stick it in the freezer. It does break down a bit when defrosted, but seeing as it's usually going to be cooked, it doesn't really matter.

isn't it a bit late in the season to still be picking rhubarb? mine still has quite a few stalks but I thought they needed to be left now to protect the crown for next year.

      any advise?

Leave some, I generally leave a few 3/4 per crown, but the rest gets chopped and chucked in the freezer exactly as Sarz described

I freeze all my rhubarb, but as I only use it for wine making, the fact that it breaks down makes the juice easier to collect.
