  • Can you re-use beetroot vinegar?

I remember reading a recipe somewhere for eggs pickled in old beetroot vinegar, it apparently produced shocking pink eggs. But is there any issue with saving the old vinegar from pickled beetroot and can you re-use it with next year's crop?

pre-used vinegar may be more dilute. I can't think of any other problem.
