  • strawberrys?

    hi

    I went shopping in tescos today and they had boxes of strawberrys reduced to 39p!!!!!!
    Anyway i brought 9 boxes and need to know what i should make with them??
    Thinking about jam, but need your advice.
    New to this gardening lark... fingers slowly turning green!

        Well that may suit some of you, Threepeas, but not all!

        Strawberry Freezer Jam

        Just wondering if you would find a recipe for freezer strawberry jam useful. You'll need to track the Certo down tomorrow. But those strawbs won't last very long fresh.

              Bottle of Voddy.
              Add Strawbs.
              Add a little sugar.
              Put somewhere dark.
              Shake daily for first week, then twice weekly for next month.
              Remove Strawbs about 3-4 months later.
              Adjust sugar to taste.
              Have party!

              There are probably 'proper' recipes on the internet, but basically it's the same theory as Sloe Gin, and all the rest. I usually forget I've made it, and it's always better if you can leave it longer. In fact I have two Demi-johns hiding somewhere, that I made in about Sept/Oct last year! One has Damson Vodka, the Other has Blackberry Brandy - I think!!!

                I do a much quicker Strawberry vodka than that. It tends to be sweet, but I like fruity liqueurs sweet!
                Slice the strawberries, layer in a big jar with up to half their weight of sugar, keep in fridge a week.
                Strain off the syrupy liquid, rinse off any undissolved sugar with a little vodka, GENTLY squeeze the fruit to get a bit extra juice (you don't want 'bits').
                Add as much further vodka as you wish.
                Unfortunately I never actually measure these things, but it works pretty good!
                For harder fruits, loosely fill the jar with fruit, 'top up' with dry sugar (it seems to come to about 1 part sugar to 2 parts fruit by weight), keep somewhere warm for 48 hours, then add the alcohol, and keep in the jars for 2-3 months or so, stirring when you can be bothered.
                Strain off and bottle, ready to drink!
                Flowers come in too many colours to see the world in black-and-white.

                  No certo in our Sainsburys and its the biggest down here...mind you, they dont even stock skimmed organic milk, so hardly surprising!

                    You could look for Jam Sugar, which usually has pectin added, or if you want to do things the hard way (lacking an easy one) try boiling apple peel-and-cores in the smallest possible amount of water until the little bits of apple flesh left on there are REALLY mushy, the strain, the liquid is a good source of pectin. Can't remember the quantities, but I know there is a grape around who extracts pecting this way for regular use, and hopefully will be commenting soon.
