  • Squash and coconut soup.

    In a very recent post I said I was using the last of my Delicata squash for soup.
    This was my recipe ..

    A few weeks ago I bought a cheap coconut at a well know supermarket.
    It has sat in my veg basket for around 3 weeks, I don't really know what to do with it.

    So I cut out the flesh (no milk) and zapped it a a food processor till it was very fine.

    I topped and tailed the squash cut in half and deseeded.

    In a baking tray with skins still on, plus garlic and a sliced onion, salt, pepper, drizzle of olive oil.

    1 Hour at 180C

    Into a large pan + water + 2 veg stock cubes and the coconut.

    Boiled for about 20 mins.

    Then liquidized skins and all. Gave it a good long zap to sort skins.

    Yummy sweet soup !

    Sounds delicious. I'll remember this for this year's squash. That said, I'll probably remove the skins. The dogs wouldn't forgive me if I didn't as they love them!

      Love using coconut in soup, it goes really well with parsnip or courgette too. I buy those hard blocks and just cut off a bit at a time.

        ( I bet a dash of chilli in there would work too!...mind you I'm bonkers about chilli and add it to most things I eat!!! )

        I've moved this thread so it'll be easy to find in future with the other recipes....

          I have a few turks turbans yo eat so will try that - sounds yum. I eat the skins as well - a little bit chewy, a little bit nutty, lovely.
          Spaghetti squash skin is horrible but like Snoop my dog loves them.

            Yes I was think a dash of chilli and perhaps coriander/cumin powder. Err would that be a curry ?

              I've just eaten this! I roasted the squash this morning & put in the fridge, so just had the second part to do for dinner. I used a tin of coconut milk & added a chili - absolutely delicious! The sweet creamy squash & coconut set of the chili beautifully - soothing & cleared my nose at the same time with no burn
