Default Slow cooker ideas please!

With the longer evenings nearly in sight, we are hoping to spend most of them either on the allotment or in the garden.. Id like to utilise my slow cooker more - put stuff in before work - so I dont have to spend (ie waste! ) valuable gardening time in the kitchen! We do a kick-ass bean soup/stew, but has anyone got any more - pref veggie - ideas please?

I was going to suggest Morrocan/Turkish/Greek lamb based dishes until you mentioned veg preference.

A whole chicken also works well with some garlic, onions and lemon.

I can recommend the slow cooker book by (not sure of the first name might be Caroline) Atkinson (Ill check when I'm next in the vicinity of the kitchen! It is a great book and has really opened up cooking for us with the slow cooker.

suet puddings work fantastically well in slow ovens, sweet or savoury.

My favourite slow cooker recipe is a pork and pineapple concoction, but it's obviously not veggie, sorry.
