  • Marinated garlic

    Hi

Has anyone tried making marinated garlic? They have it at a lot of the farmers markets around here. I was told that the marinade contains sundries toms, lemon, parsley, olive and something else which I thought I'd remember but have now managed to forget.

You can pickle them. There's a few recipes about if you do a search. Remember that anything that you store in "just oil" needs to be consumed quickly.

That's great, thanks Scarlet. I did do a search but included sun-dried toms in it and couldn't find anything.
Seeing as my tomatoes won't mature in time to get dried by the sun it's probably just as well I use a recipe without them

Lots of recipes around that don't include vinegar, I'm always a little worried about these as anything that's just stored in oil can go off in a few days and they often appear to be "preserves". They won't keep, you can't just glug oil on stuff and store in the fridge for months for fear of botulism. Use a trusted and "new" recipe which will usually include vinegar.

Thanks for the advice because I had NO CLUE and was planning to use a recipe which only called for oil because that's what they had at the farmers market. Thanks very much. Now all I have to do is sit tight and wait for my garlic to finish growing
