  • it's beginning to smell a lot like christmas!!!

    yum,yum,yum
have just finished my christmas jam.............

    2lb carrots - grated
1lb pears - cored and diced
2 fresh pineapples - crushed (put in food processor)
grated rind and juice of 2 large oranges
    1lb - mixed - dates,figs and cranberries
    1tsp cinnamon
    1tsp all spice
    1tsp ground nutmeg
    1tsp ground cloves
    3lb sugar (i used 2lb jam sugar and 1lb granulated - coz that's what I had!)

put all fruit and spices in pan, bring to boil and then simmer for approx 30mins.

Add sugar, bring to boil, boil rapidly for 10mins or until setting point is reached

    pour into sterilised jars

    ah voila!

    enjoy

    Merry Christmas

Made my cake, strayed away from my old recipe which took 4hours in a slow oven to one from the ft which only took 75 mins. Smells good, gave it a few more minutes to be on the safe side, and the skewer came out clean enough. Seems a. It damp underneath, might be from the vast quantity of rum which the fruit was soaked in? Might make another from my old recipe to be on the safe side
