  • Ideas for preserving mint

    Lots of mint which I haven't really used much of this year

    I'm looking for a few ideas to preserve it through the winter - other than the usual drying or freezing!

    I generally turn excess mint into mint sauce.
    Location - Leicestershire - Chisit-land

          I used to make mint sauce concentrate but don't have the recipe sorry. Basically, it was a load of chopped mint packed really tightly into a jar and covered with a tiny amount of vinegar. When you wanted mint sauce, take a spoonful out, add vinegar and ? sugar and ? hot water and there you have it. Instant mint sauce.

              The recipe there for pesto includes creme fraiche,If you want you can use olive oil instead. I filled an ice cube tray with my basil pesto,then they can be put into a freezer bag,to save space for tons more.
