  • Hunters Haul for yule

    In my family we celebrate Yule and the winter solstice.
    We try to include as much home grown, foraged and wild food as possible since the celebration is about nature and seasons.

    My brother has just delivered a bag of 4 partridges, 2 pheasants and a large rabbit.

    I also have (in the freezer) several bags of assorted berries and rosehips....
    and a goodly number of wild chestnuts...
    The sloes are all in jar steeping in gin but can also be added to the haul.

    I have a recipe (a very looong recipe) for Delia Smith's raised game pie but it's not very pretty. I could make some sort of savoury jam to go on the side I suppose but I'm wondering if anyone here has any tips/ideas/recipes that will show these ingredients off ?

    I'm looking for something splendid and festive...it will be the centrepiece of our feast table after all!

    I've got a game pie recipe. I will dig it out tomorrow for you. I've not had it for a while but I remember it was very nice. Can't remember if it's a good looker !

      What about a sort of game roulade, like a 3 bird roast? Can you bone them all? Then partridge inside pheasant inside rabbit and seal it up with bacon wrapped all round.
