  • Hugh's Honey Wholemeal Cake...you MUST try this!!

    Ok well there's no point denying it, I am a big fan of HFW, but this cake is just SUPERB and one of the best cakes I have ever eaten! (Even my teenage son ate it...so thats saying something )

    300g unsalted butter, softened
    250g golden caster sugar
    4 medium eggs
    150g wholemeal self raising flour
    150g ground almonds
    1 teaspoon baking powder (I didnt use this and it turned out fine)
    50g flaked almonds
    4 tablespoons runny honey

    grease 23cm springform cake tin and line base with baking paper. Handy hint place on baking sheet as some of the butter may seep out during cooking.

    Put the butter and sugar in large bowl and beat thoroughly until very light and fluffy. Beat in eggs one at a time, with a tablespoon of the flour. Fold in ground almonds, then sift over remaining flour and carefully fold in.
    Scrape mixture into baking tin and scatter flaked almonds on top. Place in preheated oven at 170/gas 3 (I used 4) and bake for approx 45 mins or until a skewer comes out clean (NB It was about an hour and ten mins in my oven)
    Remove from oven and while cake still hot evenly trickle the honey over the surface. It may trickle towards the middle but dont worry about that. Place tin with cake in on wire rake and leave to cool abit before turning out.

    Lovely cold but DELICIOUS warm!

    Is this the one he made in this last series? If it is, it looked realy scrummy I think he had it with some butter on....I'm a big fan as well, he's sooo good at what he dose and like me he hates waste.

      Thanks for that - sounds yummy. Think I've found myself something to do in the warm now. I was going to sort the greenhouse but baking sounds more appealing somehow!

          Hmm not sure if it was in the series, I dont remember it
          I got the recipe from River Cottage Everyday and he suggests serving it as a dessert with cream and/or fruit or cold sliced with a cuppa (thats my interpretation anyway )

          It really is a lovely cake....!! Shame its all gone, and I might have to make another one

            Mmmm, that sounds right nice. I think I have most of the ingredients in as well.... Might make that tomorrow.

            I got gifted that book for xmas - it's a good un. You should have a go at the baked chicken curry - lush!

              Have you tried the leon curd muffins or choc chip cookies from the same book, neither lasted long in my house

                I've got all the ingredients except my butter is salted butter do you think it matters ?

                  salted should be ok I have done this in the past with other recipes give it a go!!!

                    I chickened out, didn't want to spoil the taste so the cake will have to wait until I buy unsalted butter.

                      Have to admit to making this cake and it was gone within 24hrs...shocking, but true. I prob wouldn't bother with any icing/cream cheese top as it is gorgeous without it. Yum yum

                        Thanks for the recomendation mrdinkle, I am going to make that on Saturday...although I have absolutely no idea how you bone a chicken??

                        No not yet, Lottielady...Have made the Jemaican Ginger cake, and the carrot cake so far....loved the carrot cake but I found the ginger cake a bit too strong (think it was the black treacle) and dry, however my oh loved it. I am planning on making the fig, apricot and prune cake next....

                          I used salted butter the second time and couldnt tell the difference Bren.
