  • How long will cooked beetroot last in the fridge?

    Odd question!

    Weekend before last I roasted some beetroot planning on pickling them the next day.

    Following day I woke up with a raging sore throat and feeling thoroughly rotten!

    Just starting to feel better and wondered if the beetroot would still be safe to pickle/make chutney with tomorrow or coming weekend?

    I left it whole, with skins on, in a ceramic tray covered loosely with foil. It will have been in the fridge for 2 1/2 to 3 weeks.

    Any good or bit too much of a risk?

    Chook em out,they will be slimy and smelly with mold on,well any i have cooked and left beyond a few days are,eeeeeeuk,
    by the way it is not an odd question,better safe than sorry,

      yes- chuck, I am affraid. I usually boil mine and they start getting a bit furry after 3 days

        Blimey, I've had some up to a week in the fridge before I got tired of red toilet sessions and threw the rest in the compost.

          Does it look and smell off? (am guessing it will by now), if so then compost, if it seems fine (unlikely I'd have thought) then try a small bit and if it tastes OK then use it. I've quite happily kept it for a week in a sealed box in the fridge in the past but suspect yours is too old.

          Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

          Which one are you and is it how you want to be?

            Just a thought - I read that all preserved foods should be made from the best quality foods to start with so perhaps they are too old even if they're not running around the fridge on their own!

              Thanks everyone!

              Sadly they were, as you all suspected, far too old and slimey!

              At least I was prepared for the worst when I opened it up!

              Ah well, there's always next year!
