Default Hot chocolate puddings

150g dark chocolate (I use Green & Blacks 70% dark for this)
100m double cream
100g unsalted butter (plus extra for greasing)
100g dark brown sugar
2 eggs (beaten)
50g plain flour
40g cocoa
25g ground almonds

Heat oven to GM 6/200 C/400 F

Melt chocolate over a pan of simmering water, stir in cream and chill for 15 mins

Grease 4 individual pudding moulds or ramekins with butter

Beat together the sugar and butter, then add the eggs gradually.

Sift in the flour, cocoa powder and ground almonds.

Half fill the moulds with the mixture, add 1 tsp of the chilled chocolate mixture, then top with the remaining pudding mixture.

Bake for 10 mins until set
