I thought the under oil (sott'olio) recipes were thought a bit risky nowadays cos of the risk of botulism?
Or do you heat the oil and jars before potting up?

Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

Which one are you and is it how you want to be?

I would probably make up a meal or two that I'd usually put green peppers into, chili etc then freeze that for a quick dinner.

I would roast, peel and freeze in smallish packages to have for the winter. Nothing nastier than a raw pepper in my opinion - the gift that keeps on giving!!! LOL
