  • Great mixed roast veg bake

    I made a great roast veg bake with Couscous a couple of days ago and had it every day since, it is so simple thought I would share.

    Baking tray
    2 medium size parnsips
    1/4 of a good size crown prince squah
    8 Shallots
    1 baking potato
    1 red pepper
    Olive oil
    Sea salt
    Pepper
    Handful of chilli flakes to taste or if you don't like too much heat use mustard powder.
    Couscous

    1: Prepare the veg however you like, personally I dont peel anything but the Squash and shallots, just give the rest a quick scrub.
    2: Cut up the veg into bite size chunks except the potato which I make wedges with.
    3: Lay out veg on baking tray and drizzle with olive oil then season to taste.
    4: bake at 200'c for 40minutes.
    5: 10 minutes before the bake is ready put some Couscous on to cook.
    5: Serve and try to get some before it all gets eaten.
