    Just HAD to share this recipe as I am making it about three times a week at the moment - it is so delicious, and not THAT fattening. Have made it using rhubarb, gooseberry, and blackcurrant so far.

        This is it - I think!!!

        Ingredients

        250g gooseberries, topped and tailed
        3 tbsp caster sugar
        200g Greek yogurt
        1-2 tbsp icing sugar
        1 tsp vanilla extract
        200ml double cream

        Method

        Put the gooseberries and sugar in a pan with a splash of water. Heat gently, stirring, then bring to a simmer and cook until the fruit starts to burst. Squash the gooseberries with a potato masher or fork until pulpy. Cool then chill until cold in the fridge.
        Put the yoghurt in a bowl and beat with the icing sugar and vanilla until smooth. Gently whisk in the cream (it will thicken as you whisk so don’t overdo it). Ripple through the gooseberry pulp then spoon into pretty glasses or bowls to serve.

          VC, that is it exactly! Thanks for doing that.

          Btw, I have found that the vanilla goes equally well with goosegogs, rhubarb and blackcurrants. Mmmm...

              Ha ha, suddenly realised you were all being ironic when you mentioned the fat free thing!!

              *stops scratching head in puzzlement*

              Actually, you could use fat free Greek yoghurt if you wanted...

                    I've actually got no problem with eating fat (which is probably why I AM fat!!)

                    But I believe that carbs are the baddies...

                      I don't even think about fat or carbs - just eat whatever I like. Happy in my skin - however stretched it may be

                        What I would do to reduce the fat would be tu use 4%fat creme fraiche instead of the cream and whisk in a stiffly beaten egg white which I always use in a fruit fool anyway to lighten the texture.

                          You are 100% correct . . . eat what you like, regardless of fat or carbs but, if you are morbidly obese like I was 2 years ago then the most important thing is to lose weight by almost whatever means you can and keep it off . . . it's very simple, eat fewer calories.

                          So there is no problem having the Gooseberry fool . . . just don't eat anything else during a day when you have one

                              Thank you, took me from August 2012 till 3 weeks ago to lose 5 st, BMI from 36 to 24, very happy, have no intention of doing it again so will be keeping my weight at 10st by monitoring and recording it daily.
