pick when they look ready, small ones for pickling big ones for roasting.
top and tail, place on a backing tray, roast slowly in oven, 130 degrees c for 20 mins should do depending on size, cut an x in the top, pop in a knob of butter and some black pepper, delicous, also nice with fetta cheese.
or borch, or crisps, or raw on salad, mmm love beets, dont forget the leaves on your salad.

Yoanbob - your roast beetroots sound delicious - will try it. What kind of vinegar do you use to pickle your beetroot and do you have to put in any spices?
Thanks
