Default Cucumbers

Hi Guys
I have a serious glut of big fat long juicy cukes at the moment (I could pick about 60 tomorrow and you wouldn't know I'd touched them)
I need your help to overcome this - cuke recipes especially for preserving, pickling chutneys or soups required please. You've never failed me before and I know you won't this time. Cheers y'all.

What about Apricot and cucumber soup. Sound like something they would buy at the farmers market. Recipe is on Food down Under but you could personalise it and make it your own.

Cheers to you both Alice and Beki.
Have made a trial batch of Cuke Soup tonight using 3 cukes - each over 900g in weight - if it's good I'll make a proper batch using 15 cukes for the Farmers Market on Saturday.
Read a chutney recipe from USA tonight - the guy said it was so good he and his family made chutney from 200 cukes - that's what you call obsessed.
I should get 40 into my veg boxes this Friday, another 25 - 30 at the Market on Saturday with 15 for the soup - maybe that'll let me catch up with them a bit, and give me some breathing space - at least for a week or so. Some of them are getting really big now.
