We were given 2 huuuuge green courgettes yesterday, I'm going to halve one, brown off some mince and onions, add garlic and loads of fresh toms, a bit of basil and the flesh of the courgette before stuffing the 2 halves, drizzling with olive oil and a little cheese and then roasting them, thats tonights tea idea anyhows! Just hope Mr Dobby likes em! Lol!

Slice some toms and the courgette and put alternate overlapping layers on a baking tray, add a spot of salt and pepper and some crushed garlic (only a bit), drizzle over some olive oil and bake for about 20 mins - yummy
