    Zaz, I often substitute lightly cooked shredded white cabbage for rice or pasta. Its especially good with veggie chilli. Cauliflower cheese is another bulky item that only needs some tomatoes or summat on the side.

    Zaz, for great low carb recipes see here

    This is going to be our new lifestyle now that BH is diabetic. They aren't vegan as the diabetics need animal fats and proteins.

    And then there this;




    Low Carb Chocolate Cake

    Pre Heat oven to 180C

    23cm lined and buttered cake tin ( I just used a tin liner)

    150g dark chocolate (80% or above)
    150g butter
    6 eggs
    20gm of splenda ( I used Aldi Sweetener 99p jar)
    tsp vanilla essence
    100g ground almonds
    1tsp cinnamon and a pinch of ground cloves
    2tsp instant espresso


    Melt butter and chocolate together. Beat eggs vanilla and sugar together until frothy.
    Gently fold in dry ingredients - and then fold in chocolate/butter mixture. Stir gently until the mixture thickens - it's the oddest thing, how it thickens...

    Pour into the tin, bake for 35-40 mins. Remove from the oven and cover with a tea towel until cool. It will fall a couple of inches and be very moist inside.

    You can eat this slathered in fresh cream and it will still be low carb!

    Also -rethink 'your' standard ideas of what is breakfast, tomorrow for example I will be having a bubble and squeak made up from my left-over celeriac mash and lamb shank (I know, it's meat) and will top it with a fried egg.

    I use LARD to fry - LARD I tell you and haven't put on an ounce for eight weeks. For you I guess lard is a no go - so I would fry the egg (gentle heat) in butter.

    He does if he goes out but I don't think he's had a meaty meal at home since we moved in together. That's 7 years. Wowsers.

    I do ask him if he misses it but i think I feed him well enough that even when we go for a roasty dinner he chooses the veg option, so I think that's my answer.

    I just recently got into porridge and although I never thought I'd say it - it's the main thing I am missing! That and my cinnamon bagels.
