| Thanks for not really taking the p**s Squirrel! mind you when I ordered them it was some very early hour of the morning - I wasnt focusing as well as I should! Improvised with greaseproof paper, tin foil and wax discs until the proper lids arrive! dexterdog

| This is one my mum recommends, haven't made it myself but probably will do now I have picked all the toms. Sorry it's in old money 3lb green toms (skinned), 1 red pepper, 1lb onions, 2tbsps salt, 1 1/2 pints vinegar, 1tsp mixed spice, 1 tsp pepercorns, 1 tsp mustard seed, few chillis, 1 tsp cloves, 12 oz sugar. 1 Slice toms and red pepper and chop onion finely. 2 Sprinkle with salt and leave for several hours. 3 Drain well. 4 Put into a preserving pan with vinegar and spices tied in muslin. 5 simmer steadily for 10 mins. 6 Add the sugar and coninue simmering for 15-20 mins. 7 Pour into jars and seal down. This is less soft than an ordinary chutney. I suppose you could leave the spices loose in the pan if you wanted but they will be a bit crunchy.

| This year I'm using distilled malt vinegar for similar reasons. I can't always get hold of decent quantities of white wine or cider vinegar. It's definitely lighter and you don't get all the vinegar fumes in the kitchen.

| How long does it keep after the jar's been opened? I was going to make some up in some big kilner jars I've got but they must hold at least a pint so was wondering if I'd get through all that before it went off. I was thinking of scrounging jam jars from people at work if it would be better to use smaller containers. I've responsibly put all mine in the recycling box - I really ought to think ahead a bit more |

| Made this on the weekend....never stopped to think about how much I'd be making...(I had double the amount of toms) even when I had to put the mix into two pans for cooking. Wasn't till I was running out of jars that I realised how much chutney I had. 5.5 litres later & I think I'm done for the season!!! Sounds ok by its self but when you add it to the apple chutney, plum chutney and two lots of cucumber relish I can now understand the look on my husbands face!!!! |
