Saute of Peas and Lettuce Ingredients 1kg fresh peas, podded 80g unsalted butter a clove of garlic 2 Little Gem lettuces, torn or sliced. 6 thin slices of pancetta or prosciutto cut into strips a little caster sugar Maldon salt and pepper Heat ˝ litre of water with 20g of butter, sugar and salt. Bring to the boil and plunge the peas in to this for 3-5 minutes, depending on the size and then drain and refresh under a cold tap. In a sauté pan add the butter and gently fry the garlic without browning. Add the prosciutto, lettuce and peas and cook together for just two minutes - season with salt and freshly ground black pepper and serve with a knob of butter and plenty of chopped flat leaf parsley.
