Any size Hawthorns. Pick the smallest size as thinnings and use them, then as Flummry says, tennis ball size is ideal. Just don't let them get too big or they go coarse and you loose the glory of them.

Anywhere between golf ball and tennis ball size is fine. As previous posts have mentioned, any bigger they tend to woodiness.
