I thought this was grass so pulled it up from the veg patch. Had a non grass root so stopped before pulling up the other two. Can anyone please advise what this is and whether I should leave the other two? Tia GF.

Couch grass seconded. That fat white root is very brittle and if it breaks will grow into a new plant. Get as much of it out as you can, it's a proper pain.
