Default cauliflower question

These are my first ever cauliflowers and although the greenery looks as I imagined it would the forming heads/hearts/flowers are very flat and yellow rather than white, will they change or is something wrong?
Any help much appreciated .

Water and rain can discolour cauliflowers. Always water at ground level rather than watering from above the califlowers and try to keep the leaves over the curds to protect them.

Thanks LJ. I have mostly been watering at ground level and the curds are very open, not really protected at all.
Will they still be ok to eat?

Yes course they will. But don't leave them too long before you eat them. Cauliflowers have a habit of looking great one day and the next day they have gone to seed. So I would start eating them and enjoy!
