I can only think of gelatin or maybe adding apples to the recipe.

I've had a hunt at the back of my cupboards....and found a packet of uk jam sugar (presumably containing pectin?)
So....if I use that, can I forget the pectin in the recipes?...or are they suggesting more than the %in the sugar?

Also found this recipe for cucumber and vanilla jam ...using jam sugar ...which is where I got the idea from....

I like the look of those Nicos. I'm also missing pectin for my cupboards.

If you look for Sucre pour Confiture That has pectin added.

Welll...I made the cucumber mint jelly using uk jam sugar.
Cooked it for less than 5 mins and it came out solid and rediculously sweet. Well..for my tastebuds anyway.

Might tweek the recipe one more time, but the sweetness is overpowering....

You've just gotta try these things eh?

I did make another recipe of apple and courgette chutney and chucked in the left over , half cooked mint.
That, however, is already tasting rather yum!
